Grassfed!

A randown snapshot, taken during service in the kitchens of the Wayside Tavern.

Note the yellow fat. This beef is grassfed!

If they ever offer it for sale in Australia, try North American buffalo. Grass fed, about 50% denser than regular steak, SO GOOD!!!. Kind of explains why the Sioux and Cheyenne were such ass-kickers.

Even the ground buffalo (aka buffalo burgers) is excellent.

We're in luck Dave, there are herds of Bison here. Small in number so far, but they'll breed up.

I've eaten their meat aplenty, and loved it. (Careful readers of my archives will have noted a clue that I was once resident of Canada)

Being from a country that has Buffalo, I was bemused to hear Bison called Buffalo, especially when Bison is much punchier & more macho word.

Somehow "bison wings" doesn't have that same cachet.

I hope you took that snapshot during Earth Hour.
